Tomato and cucumber sandwich with green chili paste

Ingredients
Green Chili Paste
- 2-3 garlic cloves
- 1 bunch of cilantro with the stems
- 1 green chili pepper
- 1/2 tsp lemon juice
- 10 peanuts (optional)
- 2 tbsp water
- Salt to taste
Sandwich
- 2 tomatoes, thin, round slices
- 2 cucumbers, thin, round slices
- 1 tsp butter
- 8 slices of bread of your choice
- White or black pepper to taste (optional)
RECIPE
- Blend the green chili paste ingredients with very little water until a pasty consistency is reached.
- Toast the bread slices (optional).
- On one side of the bread, spread butter. On the other side, spread the green chlli paste.
- Layer the tomatoes and cucumbers on top of the chili paste, then sprinkle with pepper.
- Combine the slices and enjoy.
NOTES
Optional:
- Green chili paste can be saved in the fridge for a week or frozen. If frozen, will last for 1-2 months.
- Add in smashed avocado and/or cheese slices for extra nutrients.
