Gosht Pulao

Mutton with fragrant rice

Ingredients

  • 2 lbs goat meat
  • 2.5 cup rice, rinsed and soaked for 30 minutes
  • 2 tomatoes, finely chopped
  • 1 ½ onion, finely chopped
  • 3-4 potatoes cubed
  • 1 tbsp ginger-garlic, minced
  • 2 medium green chili peppers
  • 1 tsp red chili powder
  • 1 tsp paprika
  • 1 tsp turmeric
  • 2 tsp cumin/coriander powder
  • 1 stick of cinnamon
  • 1 tsp rai (black mustard seeds)
  • 3-4 cloves
  • 1 star anise
  • 6-8 black peppercorns
  • 2-3 green cardamom
  • 2 black cardamom
  • ½ tsp cumin seeds
  • 2-3 bay leaves
  • 1 bunch of cilantro
  • 3 cups water
  • 2 tbsp oil

RECIPE

  1. In a bowl, soak the goat pieces in vinegar and salt for 10 minutes. Rinse thoroughly and set aside.
  2. In the Instant Pot, heat the oil and add the diced onion. Keep stirring until soft and translucent.
  3. Add whole red chilies, cloves, bay leaves, cumin seeds, cardamom, big cardamom, and cinnamon.
  4. Add the meat and keep stirring until it changes color (about 2-3 minutes). Add in ginger and garlic, and stir for a few minutes.
  5. Add tomatoes, red chili powder, turmeric, cumin/coriander powder, half portion of cilantro, and salt.
  6. Add in 3 cups of warm water.
  7. Cover and pressure cook for 25 minutes. 
  8. Release the pressure, add the potatoes, lemon juice, and green chili peppers, and pressure-cook for another 5 minutes.
  9. Stir in rice and remaining cilantro. Add salt if needed.
  10. Cover and cook on the rice setting in the Instant Pot or separately in another pot.
