Stir Fried Okra

Ingredients

  • 1 lb okra, cut into circles (preferably fresh)
  • 1 tomato, chopped fine
  • 1 tsp turmeric powder
  • 1-2 tsp red chili powder
  • 2 tsp cumin/coriander powder
  • 2 tsp gram flour
  • 2 tbs oil
  • Salt to taste

RECIPE

  1. Heat oil in a pan and add the okra. Stir vigorously until the stickiness vanishes or greatly reduces. This will require 7-10 minutes during which you need to keep stirring. Be patient through this process, or the recipe will not turn out right.
  2. Then add in tomatoes. Stir continuously.
  3. After a few minutes, add in salt, turmeric, red chili powder, and cumin/coriander powder. Mix and cook well until the okras turn brown. The entire cooking process is done without ever covering the pan. 
  4. Enjoy hot with roti.

NOTES

Optional:

  1. Frozen okras tend to be extra sticky. Stir in a tsp of gram flour when the dish is almost cooked, and mix well to reduce stickiness. Cook for another minute or two. 
  2. Variation 1: Stir in 1/4 cup yogurt instead of tomato for a curry-style okra.
  3. Variation 2: Add cubed potatoes to the tomatoes.
